Chef Dan Moody -- best known as Ludo Lefebvre's sous -- joins with chef Adam Horton (a 30 Under 30 honoree) at Raphael from 5:30 p.m. on for a six-courser that includes palm sugar cured amberjack with pickled daikon; scallop crudo with uni ice cream; beef tartare made with beef heart and boudin noir; and 48 hour veal cheeks with creamed morel mushrooms ($65 per person; 818-505-3337).

Wednesday
From 6:30 to 9:30 p.m. tonight, mixologists Sam Ross, Julian Cox and Joel Black will be in house at Comme Ça to prepare a wide assortment of spring cocktails to go with chef-owner David Myers' freshly introduced bistronomy menu -- poached asparagus with cured salmon; pan-seared ling cod with lemon confit; artichoke agnolotti with clams and purple basil and more (323-782-1104).

Thursday
Dario Cecchini of Panzano in Chianti is the most famous butcher in the world, and he's spending today at Valentino, offering a pig butchery class from 10 a.m. to noon, followed by a lunch of (what else?) pork ($65, all inclusive, with proceeds going to the Meyer Children Hospital in Florence). And then, from 6 p.m. on, he's serving the food of Panzano, including his arista alla porchetta and his crostini with lardo ($125 inclusive; $155 with paired wines; 310-829-4313).

Friday
Nick + Stef's executive chef Megan Logan continues her ongoing monthly series of Meat 101 classes tonight with a lecture and tasting of New York steak and ribeye, perfect for those who have always wondered about the difference, but haven't been sure of who to ask (8-9 p.m.; $40 per person, including wines to match; 213-680-0330).
