On a cold winter day, a split pea soup is just the ticket to making you feel all warm and comforted. It's thick (clearly, we like our soups with substance) and has lots of flavor. In most split pea soup recipes, that can be attributed to the ham hock, but in this vegetarian rendition the flavor comes from Meyer lemons and mirin -- and of course, split peas.
