Michelle Obama Expected To Announce 5,000 Salad Bars For Schools

During her time as first lady, Michelle Obama has championed healthy eating and exercise for Americans.

She has put the spotlight on the nation's childhood obesity epidemic. Earlier this year, Obama launched the "Let's Move" campaign to encourage healthy living for the nation's children.

In many schools, especially in the poorest communities, fruits and vegetables are scarce.

Now, according to Grist Magazine, the first lady will announce a new partnership that will bring salad options to thousands of school cafeterias across the country.

Increased access to healthy food options has been an important part of the campaign for Obama, who instituted a vegetable garden at the White House, where she has spent time teaching children about produce.

Grist reports,

First Lady Michelle Obama is expected to announce on Monday a major new initiative that would place up to 5,000 salad bars in public schools nationwide, despite uncertainties over how local health inspectors might treat those salad bars and USDA nutrition-tracking rules that could prove a major impediment.

According to some school officials, salad bars may pose many difficulties including concerns over proper supervision, hygiene and payment.
