What better way to kick off summer than with a classic summer side-dish: potato salad! This recipe comes from my grandma Hilde, the best cook I know. Serve with chicken, steak, pork chops or salad. Scroll below the video for the full recipe! Enjoy!

GRANDMA HILDE'S POTATO SALAD

Ingredients

-3 lbs red potatoes, boiled peeled and sliced

-1 egg, beaten

-3/4 cup vegetable oil

-1/4 cup vinegar

-1 to 2 Tbsp Dill

-1 large white onion, diced

-salt pepper and pepper to taste

Procedure

-Put potatoes in a large pot. Cover them in water, put the pot on the stove and boil the potatoes until you can stick a fork 3/4 way through the biggest one. Let potatoes cool for 5-10 minutes.

-Beat the egg in a bowl then add vegetable oil and vinegar. Set aside.

-Dice onion, set aside.

-Once potatoes have cooled, peel the skin off each one. Chop all potatoes into bite sizes pieces (or slices). Mix with potatoes and pour dressing on top. Season with salt, pepper and dill and refrigerate overnight before eating.
