Massimo Bottura's Osteria Francescana is approaching its 20th year, but the restaurant has always been evolving. With 3 Michelin stars and the third spot on the World's 50 Best Restaurants list (including the title of best in Italy), the restaurant has reached a level of acclaim that few can match.

We sat down with Bottura to discuss how he keeps innovating while staying true to the restaurant's roots. He says it is much like how he hopes to evolve Italian food in general: "Thousands of years of history, we need to preserve that. But we need to renew that... and project ourselves into the future."
