Homemade tacos are a beloved dinner in many homes across the country. Many of us never tire of this family favorite, but if you're looking to put a fun twist on your next taco night, try this easy recipe. It splashes colorful bell peppers with a touch of tangy vinegar, adding some extra oomph to the classic flavor everyone loves.

Ingredients
1/2 small onion, thinly sliced
1 Tbsp. sugar
3-4 bell peppers, thinly sliced
1 Tbsp. olive oil
1/4 c. red wine vinegar
Salt and pepper, to taste
Directions
In a large bowl, combine vinegar and sugar, and stir until sugar is dissolved. Add the olive oil and stir. Add the bell peppers and onion, and mix everything together. Season with salt and pepper.
Transfer the mix to a large skillet and cook over medium-high heat for 3 to 4 minutes, stirring occasionally.
Turn off the heat, cover and let sit for 3 minutes.
Serve as a side dish/slaw, a garnish to grilled chicken or steak, or inside tacos.
