Any glance at a vintage cookbook will tell you: Gelatin was really big in the '50s and '60s. Really, really big. Whether unflavored or flavored, gelatin found its way into recipes it shouldn't have. Like weird savory salads. Home cooks were also fond of adding gelatin to their cocktails, if this vintage recipe for a "Jellied Irish Coffee Cocktail" (a 1969 recipe found by the Two Bears Farm blog) tells us anything.

So I did what any normal person with too much time, whiskey, gelatin and tolerance for vintage curiosities would do. I'd try it out myself.

The directions are as follows:

For 6 servings:
1 tbsp. unflavored gelatin
2 cups water
1 1/2 tbsp. instant coffee
4 tbsp. sugar
3 ounces Irish whiskey
Sweetened whipped cream

Soften the gelatin in 1/2 cup of water. Heat the rest of the water, add the instant coffee and sugar to the softened gelatin. Stir to dissolve the gelatin, add the whiskey, and remove the pan from the fire. Pour into demitasse cups or small bowls and chill until firm. Just before serving, mask the top of the jelly with whipped cream.
