Just because quiche recipes have become passé since the 1990s, that doesn't mean that you should forget about them. There's a reason that quiche was once so popular in the U.S., and why it has never gone out of fashion in France -- because it's just so good, and surprisingly easy to make.

Of course you can make fancy quiche recipes, but even if you don't you'll still be very happy with the results. To make quiche all you really need is a pie crust, eggs, milk and whatever you feel like adding to it -- it's a great way to get rid of vegetables that have seen better days and any leftovers.
