Have you ever tried to decorate a cake with fruit on top, only to find it sunk to the bottom during baking? If so, you'll be thrilled to hear we've got a solution -- and it's really simple. Just turn the cake upside down (but not quite literally).

In most cases, fruit is heavier than the batter, which means the topping will inevitably sink to the bottom. So the obvious remedy is to make your cake upside-down, with the fruit placed in the bottom of the pan and the cake batter spread over top. When you turn the baked cake out onto a platter, the fruit "topping" will be on top, automatically creating an impressive decoration. But the best part is the caramelization that occurs, coating the fruit with a rich glaze.
