Known as potato fans or hasselback potatoes, these spuds are thinly sliced crosswise, three-quarters of the way through the potato. After rubbing the cuts with melted butter or oil and sprinkling with the herbs and spices of your choice, you bake the potatoes until crisp. The result is the perfect cross between a baked potato and a potato chip -- a crusty, crispy exterior with a creamy, fluffy interior.
